Ingredients/Components

  • sugar - 1/2 tsp
  • milk - 3 c
  • flour - 3 Tbsp
  • butter - 3 Tbsp
  • water - 2 c
  • small onion, chopped fine - 1 item
  • shredded Cheddar cheese - 1 c
  • ground black pepper - 1 item
  • medium red potatoes - 3 item
  • crushed red pepper flakes - 1 item
  • cubed cooked ham - 1 c

How to make chunky potato soup:

Peel potatoes; cut into 1-inch cubes. In large saucepan, bring water to a boil. Add potatoes and cook until tender. Drain, reserving liquid. Set potatoes aside. Measure 1 cup reserved cooking liquid, adding water, if necessary. Set aside. Melt butter in saucepan over medium heat. Add onion to saucepan. Saut, stirring until onion is translucent and tender but not browned. Add flour to the onions. Season with the flakes and pepper to taste (cook 3 to 4 minutes). Gradually add potatoes and the reserved cup of liquid, milk and sugar into onion mixture. Stir well. Add cheese and ham; simmer over low heat 30 minutes, stirring frequently. Store leftovers, covered, in the refrigerator.
