Ingredients/Components

  • racks spareribs - 3 item
  • salt and freshly ground pepper - 1 item
  • m
  • juice of 1/2 lemon
  • Worcestershire sauce - 1 tsp
  • catsup - 1 tsp
  • Tabasco - 1/2 tsp

How to make barbecue ribs:

Preheat oven to 350°. Lay out 3 large lengths of heavy-duty aluminum foil, each large enough to envelop one rack of ribs. Sprinkle the ribs with salt, pepper and m.s.g. Enclose the ribs securely, sealing the foil so that the juice will not escape. Place the ribs in the oven and bake without opening the foil for 1 to 1 1/2 hours. Remove the ribs from the oven, open the foil and let stand until ready to grill. The juice in the foil may be added to the barbecue sauce or discarded.

Meanwhile, prepare a charcoal fire. When the coals are hot and have a white ash on top, the fire is ready.

Arrange the cooked ribs over the coals. Combine the catsup, lemon juice, Worcestershire sauce and Tabasco. If desired, add the sparerib drippings from the foil. Stir and bring to a boil. Brush the mixture over the ribs and grill until the ribs are brown on one side. Turn them carefully and brush again. Grill until brown on both sides. Note that the ribs need very little cooking on the grill, because they are already done.
