Ingredients/Components

  • oil - 2 Tbsp
  • Worcestershire sauce - 1 tsp
  • can tomato sauce - 1 oz
  • cloves garlic - 3 item
  • medium onion, chopped - 1 item
  • bay leaves - 2 item
  • whole cloves - 4 item
  • whole allspice berries - 1 tsp
  • fresh or canned tomatoes, drained - 2 c
  • pure maple syrup or corn syrup - 1/2 c
  • hickory smoked salt and hot pepper - 1/4 tsp

How to make barbecue ribs:

Tie garlic, bay leaves and cloves in double thickness of cheesecloth. Cut each slab of ribs in half. Put ribs and spice mixture into oven. Add cold water to cover and simmer 30 minutes or until fork-tender. Drain.

Meanwhile, heat oil in large saucepan. Add onion. Cook and stir until onion is tender. Stir in remaining ingredients. Simmer 20 minutes or until slightly thickened, stirring occasionally. Puree in food processor blender.

Put ribs into shallow roasting pan. Generously brush ribs on both sides with sauce. Bake at 350° about 30 minutes until sauce is bubbly and glazed, turning ribs occasionally and brushing with sauce. Broil 3 minutes, turning once, for a more glazed look and slightly crispier rib if you like.
