Ingredients/Components

  • Worcestershire sauce - 1 Tbsp
  • catsup - 1/2 c
  • salt and pepper to taste - 1 item
  • medium onion, chopped - 1 item
  • green pepper, chopped - 1 item
  • bay leaves - 2 item
  • thyme - 1 tsp
  • bunch green onions, chopped - 1 item
  • ham bone - 1 item
  • Tabasco - 2 tsp
  • cloves garlic, peeled and chopped - 7 item
  • red beans, soaked overnight - 1 lb
  • sausage, cut in 1-inch pieces - 1 lb

How to make red beans and rice:

Drain the beans; put them in a 6-quart heavy pot with ham bone. Add 3 quarts fresh water. Cover; simmer for 1 hour. The beans must be covered with water at all times. Add water if needed. Add the rest of ingredients. Add more water, to cover, if needed. Simmer, partially covered, for 1 1/2 to 2 hours, or until liquid has thickened. Serve over cooked rice.
