Ingredients/Components
- Worcestershire sauce - 1 Tbsp
- catsup - 1/2 c
- salt and pepper to taste - 1 item
- medium onion, chopped - 1 item
- green pepper, chopped - 1 item
- bay leaves - 2 item
- thyme - 1 tsp
- bunch green onions, chopped - 1 item
- ham bone - 1 item
- Tabasco - 2 tsp
- cloves garlic, peeled and chopped - 7 item
- red beans, soaked overnight - 1 lb
- sausage, cut in 1-inch pieces - 1 lb
How to make red beans and rice:
Drain the beans; put them in a 6-quart heavy pot with ham bone. Add 3 quarts fresh water. Cover; simmer for 1 hour. The beans must be covered with water at all times. Add water if needed. Add the rest of ingredients. Add more water, to cover, if needed. Simmer, partially covered, for 1 1/2 to 2 hours, or until liquid has thickened.
