  • chopped pecans - 1 c
  • soda - 1 tsp
  • buttermilk - 1/2 c
  • vegetable oil - 1 c
  • all-purpose flour
  • mashed bananas - 1 c
  • egg white - 1 item
  • box powdered sugar - 1 item
  • eggs save 1 white - 4 item
  • Add 3 whole eggs plus 1 yolk, one at the time; mix well

How to make banana nut cake:

Cream together oil and sugar. Add 3 whole eggs plus 1 yolk, one at the time; mix well. Dissolve baking soda in buttermilk and add alternately with the flour, beating well. Fold in pecans.

Place in 3 greased and lined 9-inch pans and bake at 350° until a straw comes out clean.Frosting:1 stick margarine1 box powdered sugar1 egg white Melt margarine and mix with powdered sugar and egg white; beat until spreading consistency. Sprinkle with additional chopped pecans, if desired.
