  • sugar - 1 c
  • cinnamon - 1 tsp
  • vanilla - 2 tsp
  • salt - 1/4 tsp
  • flour - 2 c
  • oil - 1/2 c
  • buttermilk - 1/2 c
  • baking powder - 1/2 tsp
  • baking soda - 1 tsp
  • egg - 1 item
  • mashed ripe bananas - 1 c
  • grated zest of 1 lemon - 1/2 item
  • chopped nuts: pecans, walnuts or almonds - 1/2 c

How to make banana bread:

Preheat the oven to 350°. Butter and flour a 3 x 5 x 9-inch loaf pan.

In the bowl of an electric mixer, combine the eggs, oil and vanilla. Add the sugar, bananas and cinnamon. Beat until smooth.

Sift together the flour, baking soda, baking powder and salt. Add to the banana mixture, then mix in the buttermilk and lemon zest. Beat to come.

Sprinkle 1/4 cup of the nuts in the bottom of the loaf pan. Pour the batter into the pan. Sprinkle with remaining 1/4 cup of nuts on top. Bake for 55 to 60 minutes or until a cake tester or wooden toothpick comes out clean.
