Baked potato soup
Ingredients/Components
- milk - 6 c
- sour cream - 1 c
- butter or margarine - 2/3 c
- salt - 3/4 tsp
- all-purpose flour - 2/3 c
- pepper - 1/2 tsp
- shredded Cheddar cheese
- green onions, chopped - 4 item
- slices bacon, fried and crumbled - 12 item
- large baking potatoes - 4 item
How to make baked potato soup:
Preheat oven to 400°. Wash potatoes; pierce several times with fork. Bake 1 hour or until done. Cut in halves lengthwise, scoop out pulp; discard jackets. Melt butter in saucepan over low heat. Add flour; cook until smooth, stirring constantly. Cook for 1 minute longer. Add milk gradually; cook over medium heat until thickened and bubbly, stirring constantly. Add potato pulp, salt, pepper, 2 tablespoons green onions, 1/2 cup bacon and 1 cup cheese. Cook until heated through. Stir in sour cream. Serve topped with remaining green onions, bacon and cheese.
