Ingredients/Components

  • sugar - 1 c
  • vanilla extract - 1/2 tsp
  • butter or margarine - 3/4 c
  • flour - 2 c
  • baking powder - 1/4 tsp
  • egg - 1 item
  • shredded coconut
  • chopped walnuts - 1/2 c
  • jar apricot preserves - 1 oz

How to make apricot bars:

In a large mixing bowl, cream butter and sugar. Add egg; mix well. In separate bowl, combine flour and baking powder. Gradually add to butter mixture. Add coconut, walnuts and vanilla extract; mix thoroughly. Press 2/3 of dough into a greased 13 x 9 x 2-inch baking pan. Spread with preserves; crumble remaining dough over preserves. Bake at 350° for 30 to 35 minutes. Cool. Yields 36 bars. Freezes well.
