Apricot bars
Ingredients/Components
- sugar - 1 c
- vanilla extract - 1/2 tsp
- butter or margarine - 3/4 c
- flour - 2 c
- baking powder - 1/4 tsp
- egg - 1 item
- shredded coconut
- chopped walnuts - 1/2 c
- jar apricot preserves - 1 oz
How to make apricot bars:
In a large mixing bowl, cream butter and sugar. Add egg; mix well. In separate bowl, combine flour and baking powder. Gradually add to butter mixture. Add coconut, walnuts and vanilla extract; mix thoroughly. Press 2/3 of dough into a greased 13 x 9 x 2-inch baking pan. Spread with preserves; crumble remaining dough over preserves. Bake at 350° for 30 to 35 minutes. Cool. Yields 36 bars. Freezes well.Recipe categories: Desserts, Cookie and brownie, Bar cookie.
