Apple pecan muffins
Ingredients/Components
- sugar - 1 c
- vanilla
- salt - 1/8 tsp
- flour
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- large egg - 1 item
- lemon juice - 2 Tbsp
- ground cinnamon - 1/2 tsp
- grated lemon peel - 3/4 tsp
- chopped toasted pecans - 1/2 c
- coarsely grated apples - 2 c
How to make apple pecan muffins:
Preheat oven to 350°. Grease 1/2 cup muffin pans. Sift flour, baking soda, cinnamon and salt. Combine sugar, oil, egg, lemon juice, vanilla and lemon peel. Whisk to blend. Mix in dry ingredients, then apples and pecans. Spoon 1/3 cup batter into each muffin cup. Bake about 35 minutes. Turn muffins out on rack. Cool slightly. Serve warm.
