Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- granulated sugar - 3/4 c
- milk
- vanilla extract - 1 tsp
- cornstarch - 2 Tbsp
- nutmeg - 1/4 tsp
- baking powder - 2 Tbsp
- all-purpose flour - 1 c
- dash of salt - 1 item
- stick butter, melted - 1/2 item
- lemon juice - 2 Tbsp
- whole wheat flour - 1 c
- apple cider - 2 c
- medium apples, peeled, cored and chopped - 2 item
- In a separate bowl, whisk together milk and eggs
How to make apple pancakes:
In a large bowl, stir together flours, sugar, baking powder, cinnamon and salt. In a separate bowl, whisk together milk and eggs. Pour milk mixture into flour mixture and stir until relatively lump free. Whisk in melted butter, then add apples. Spoon onto hot griddle. Serve with Spiced Cider Sauce. Makes 4 to 6 servings.Spiced Cider Sauce:1/2 c. granulated sugar2 Tbsp. cornstarch1/4 tsp. cinnamon1/4 tsp. nutmeg2 c. apple cider2 Tbsp. lemon juice In large saucepan, stir together first four ingredients. Add cider and lemon juice. Cook, stirring constantly, until sauce thickens and boils. Boil and stir for 1 minute.
