  • vanilla - 1 tsp
  • milk - 1 c
  • vanilla extract - 1 tsp

  • all-purpose flour - 3 Tbsp
  • egg whites - 2 item
  • dash of salt - 1 item
  • sifted cake flour - 3 c
  • light corn syrup - 1 Tbsp
  • lemon juice - 2 Tbsp
  • Add remaining ingredients
  • can crushed pineapple undrained - 1 oz
  • Add eggs, one at a time, beating well after each addition
  • plus 4 Tbsp - 1/4 c
  • butter/margarine - 1 Tbsp
  • softened butter/margarine - 1 c
  • grated coconut, divided - 2 c
  • Pineapple Filling recipe follows - 1 item
  • Seven-Minute Frosting recipe follows - 1 item

How to make coconut-pineapple cake:

Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt. Add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in flavorings.

Pour batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and cool completely. Spread one layer with half of Pineapple Filling. Sprinkle 1 cup coconut over filling. Repeat with next layer. Spread Seven Minute Frosting on top and sides of cake; sprinkle with remaining coconut.Pineapple Filling:1 c. sugar3 Tbsp. all-purpose flour1 (8 oz.) can crushed pineapple (undrained)2 eggs, beaten2 Tbsp. lemon juice1 Tbsp. butter/margarine1 tsp. vanilla extract Combine sugar and flour in a small saucepan. Add remaining ingredients. Cook over medium heat, stirring constantly, until thickened (about 2 minutes). Cool.Seven-Minute Frosting:1 1/2 c. sugar2 egg whites1 Tbsp. light corn syrup1 tsp. vanilla extract1/4 c. plus 4 Tbsp. cold water dash of salt Combine all ingredients, except vanilla, in top of double boiler. Beat on low speed for 30 seconds. Place over boiling water. Beat constantly on high speed 7 minutes or until peaks form. Remove from heat. Add vanilla and beat 2 minutes or until frosting is thick enough to spread.
