Ingredients/Components

  • flaked coconut - 1/2 c
  • boiling water - 2 c
  • frozen nondairy whipped topping, thawed
  • mandarin orange segments, drained - 11 oz
  • can crushed pineapple in juice undrained - 8 oz
  • or 2 4 oz - 8 size

How to make ambrosia mold:

Drain pineapple, reserving juice. Add water to juice to measure 1 cup. Stir boiling water into gelatin in large bowl 2 minutes or until completely dissolved. Stir in measured liquid. Refrigerate 1 1/4 hours, until slightly thickened (consistency of egg whites). Stir in topping with wire whisk until smooth. Refrigerate 10 minutes or until mixture will mound. Stir in pineapple, orange, marshmallows and coconut.

Spoon into 6-cup mold. Refrigerate for 3 hours or until firm. Unmold and garnish with mandarin orange segments and fresh mint leaves, if desired. Makes 10 servings.
