Zucchini pancakes
Ingredients/Components
- sugar - 3 Tbsp
- egg - 1 item
- Bisquick - 3 c
- shredded zucchini - 3 c
How to make zucchini pancakes:
Shred entire zucchini. Removal of seeds and peeling is optional. Mix zucchini, egg and sugar together, then add Bisquick. Mix thoroughly. Drop spoonfuls of batter onto hot griddle, slightly oiled. Cook approximately 1 minute on each side.Tip: Batter is freezable for up to 6 months.
