Zucchini pancakes
Ingredients/Components
- salt - 1/2 tsp
- flour - 1/2 c
- eggs, separated - 2 item
- pepper - 1/8 tsp
- shredded zucchini - 2 c
- Parmesan or Mozzarella cheese - 1/2 c
How to make zucchini pancakes:
In small bowl mix flour with shredded zucchini, pepper, salt and egg yolks. In another bowl, beat egg whites until stiff, then add to mixture. Drop by tablespoon into a skillet in hot oil. Brown on both sides. Serve immediately.Recipe categories: Pancakes and waffles, Breakfast, Grains.
