Ingredients/Components
- eggs - 2 item
- Bisquick - 2/3 c
- garlic salt - 1/8 tsp
- sliced green onions - 1/4 c
- Parmesan cheese - 1/4 c
- margarine, melted - 1/4 c
- shredded zucchini - 3 c
How to make zucchini pancakes:
Beat baking mix, margarine, garlic salt and eggs until well blended. Stir in zucchini, green onions and Parmesan cheese. Grease heated pan. Use 1/4 cup of mixture for each patty. Spread slightly. Cook until dry around the edges. Turn and cook until golden. Makes 12 pancakes. Serve as side dish.Recipe categories: Pancakes and waffles, Breakfast, Grains.
