  • sugar - 2 c
  • cinnamon - 2 tsp
  • vanilla - 1 Tbsp
  • salt - 1 tsp
  • flour - 3 c
  • nutmeg - 1/4 tsp
  • oil - 1 c
  • soda - 1 tsp
  • eggs, beaten - 3 item
  • baking powder - 1/4 tsp
  • grated zucchini - 2 c
  • raisins - 1 c
  • cloves - 1/4 tsp
  • allspice - 1/2 tsp
  • walnuts - 1 c
  • crushed pineapple, drained - 2 c

How to make zucchini cake:

Beat the first 5 ingredients in large mixing bowl. Sift or stir next 8 ingredients; mix into batter. Stir in nuts, raisins and pineapple. Pour into greased and floured pans. Bake for 1 hour, or until tester comes out clean. If using a 13 x 9-inch pan, you will have enough batter for 1 or 2 loaf pans for bread.

Frost with cream cheese frosting.
