Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- vanilla - 1 Tbsp
- salt - 1 tsp
- flour - 3 c
- nutmeg - 1/4 tsp
- oil - 1 c
- soda - 1 tsp
- eggs, beaten - 3 item
- baking powder - 1/4 tsp
- grated zucchini - 2 c
- raisins - 1 c
- cloves - 1/4 tsp
- allspice - 1/2 tsp
- walnuts - 1 c
- crushed pineapple, drained - 2 c
How to make zucchini cake:
Beat the first 5 ingredients in large mixing bowl. Sift or stir next 8 ingredients; mix into batter. Stir in nuts, raisins and pineapple. Pour into greased and floured pans. Bake for 1 hour, or until tester comes out clean. If using a 13 x 9-inch pan, you will have enough batter for 1 or 2 loaf pans for bread.Frost with cream cheese frosting.
