Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • salt - 1 tsp
  • flour - 3 c
  • oil
  • baking powder
  • baking soda - 1 tsp
  • chopped walnuts - 1 c
  • grated zucchini - 3 c

How to make zucchini bread:

Break eggs into a large deep bowl and beat well. Add the sugar and beat. Add oil and beat until blended. Stir in the zucchini and walnuts.

Combine the flour, cinnamon, baking powder and baking soda in a sifter and sift into the zucchini mixture gradually, stirring to blend well. Pour batter into 2 greased 9 x 5-inch loaf pans. Bake at 350° for 50 to 55 minutes, or until a cake tester inserted near the center of the bread comes out clean. Let the loaves cool in the pans on racks for 5 minutes, then turn onto the racks to cool completely.
