Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 2 tsp
- salt
- flour - 2/3 c
- baking powder - 1/2 tsp
- baking soda - 2 tsp
- shortening - 2/3 c
- nuts - 2/3 c
- grated zucchini - 3 c
- raisins - 2/3 c
- cloves - 1 tsp
How to make zucchini bread:
Heat oven to 350°. Grease bottoms only of 2 (9 x 5 x 3-inch) loaf pans. Mix shortening and sugar into a large bowl. Add eggs, zucchini and water. Blend in flour, baking soda, salt, baking powder, cinnamon and cloves. Stir in nuts and raisins. Pour into pans. Bake until wooden pick inserted in center comes out clean, about 1 hour and 10 minutes; cool slightly. Loosen sides of loaves from pans; remove from pans. Cool completely before slicing.
