Ingredients/Components

  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 3 c
  • oil - 1 c
  • baking powder - 1/2 tsp
  • baking soda - 1 tsp
  • brown sugar, packed - 2 c
  • chopped walnuts optional - 1 c
  • peeled, grated zucchini small ones - 2 c

How to make zucchini bread:

Beat eggs and oil together; add brown sugar, zucchini and vanilla. Cream together. Add dry ingredients and nuts. Mix well. Grease and flour pans (I use 4 small loaf pans). These breads freeze well and make great gifts.

Bake at 325° for 45 minutes to 1 hour. Done when knife or toothpick comes out clean.
