Ingredients/Components
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1 tsp
- flour - 3 c
- oil - 1 c
- baking powder - 1/2 tsp
- baking soda - 1 tsp
- brown sugar, packed - 2 c
- chopped walnuts optional - 1 c
- peeled, grated zucchini small ones - 2 c
How to make zucchini bread:
Beat eggs and oil together; add brown sugar, zucchini and vanilla. Cream together. Add dry ingredients and nuts. Mix well. Grease and flour pans (I use 4 small loaf pans). These breads freeze well and make great gifts.Bake at 325° for 45 minutes to 1 hour. Done when knife or toothpick comes out clean.
