Yorkshire gingerbread
Ingredients/Components
- milk - 1/2 pt
- eggs, beaten - 2 item
- plain flour - 12 oz
- margarine - 8 oz
- ground ginger - 4 tsp
- soft brown sugar - 8 oz
- bicarbonate of soda - 2 tsp
- treacle or syrup - 8 oz
- cinnamon or mixed spice - 3 tsp
How to make yorkshire gingerbread:
Grease and line a 12 x 8-inch pan. Preheat the oven to 350°. Gently heat margarine, sugar and syrup until just melted. In a bowl, sift the flour, ginger and cinnamon; mix well until evenly colored. Stir in the melted mixture. Beat the eggs into this mixture. Warm the milk until lukewarm; add the bicarbonate of soda. Beat well until smooth and even (mixture will be very soft). Pour mixture into greased pan and bake for 1 to 1 1/4 hours. Leave in the baking pan for about 10 minutes before cutting into squares.Recipe categories: Low fat, High calcium.
