Winter fruit salad
Ingredients/Components
- white sugar - 1/2 c
- lemon juice - 1/2 c
- diced onion - 2 tsp
- Dijon-style prepared mustard - 1 tsp
- salt - 1/2 tsp
- vegetable oil - 2/3 c
- poppy seeds - 1 Tbsp
- head romaine lettuce, torn into bite sized pieces - 1 item
- shredded Swiss cheese - 4 oz
- cashews - 1 c
- dried cranberries - 1/4 c
- apple, peeled, cored and diced - 1 item
- pear, peeled, cored and diced - 1 item
How to make winter fruit salad:
Dressing: In a blender or food processor, combine sugar, lemon juice, onion, mustard and salt. Process until blended. With machine still running, add oil in a slow steady stream until mixture is thick and smooth. Add poppy seeds and process just a few seconds more to mix.In a large serving bowl, combine romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, cubed apple and cubed pear. Toss to mix, then pour dressing over salad just before serving and toss to coat.
