Ingredients/Components

  • butter or margarine - 1 c
  • flour
  • water - 4 qt
  • long grain rice - 1/4 c
  • salt and pepper to taste - 1 item
  • large onions, chopped - 3 item
  • stalks celery, chopped - 3 item
  • poultry seasoning - 1/2 tsp
  • large carrots, chopped - 2 item
  • diced cooked turkey - 3 c
  • half and half or milk - 1 pt
  • turkey carcass - 1 item

How to make williamsburg inn turkey soup:

In large kettle, cook turkey carcass with water to make 3 quarts stock. Remove bones; reserve meat for soup. Strain stock; set aside.

In saucepan, combine onions, celery, carrots, rice and 1 quart of stock. Cook for 20 minutes; set aside. In large soup kettle, melt butter. Blend in flour and heat until bubbly. Add milk and remaining stock to mixture; cook and stir until bubbly. Stir in the reserved vegetable mixture, turkey and seasonings to taste. Heat slowly.
