  • sugar - 1 c
  • milk - 1/2 c
  • salt - 1/8 tsp
  • flour - 1 c
  • butter - 3/4 c
  • baking powder - 1 tsp
  • shredded coconut - 3/4 lb
  • egg whites - 3 item
  • white raisins - 1 c
  • candied pineapple - 1 c
  • almond or vanilla extract - 1 tsp
  • maraschino cherries, drained - 1 c
  • finely chopped citron - 1/2 lb
  • nut meats pecans - 1/2 lb
  • grated rind of 1 lemon or orange

How to make white fruit cake:

Sift sugar. Cream together sugar and butter until fluffy. Add flour, baking powder, milk, salt, extract and rind. Flour fruit in a little extra flour. Add to mix. Add nuts. Grease tube pan. Bake at 350° for 1 hour or until done.
