White fruit cake
Ingredients/Components
- cake flour - 3 c
- self-rising flour - 1 c
- eggs - 10 item
- sticks butter - 3 item
- sugar - 2 c
- white raisins - 2 lb
- candied pineapple - 1 lb
- candied cherries - 1/2 lb
- pecans - 1 qt
- vanilla extract - 1 Tbsp
How to make white fruit cake:
Have all ingredients at room temperature. Cut all candied fruit into small pieces. Chop pecans. Dredge all of these in a half cup of flour. Set aside. Grease a 10-inch tube pan. Cut a circle of brown paper to fit bottom of pan. Fit in pan and grease and flour again. Preheat oven at 350°.In a large mixing bowl, combine sugar and butter and cream until smooth. Add the eggs, one at a time, using an electric mixer. Add flour until all ingredients are mixed. Add vanilla. If too stiff, add a tablespoon or two of water. Pour batter into pan. Turn oven down to 300° and bake for 2 hours. Test with toothpick.
