White chili
Ingredients/Components
- sour cream - 1 item
- ground cloves - 1/4 tsp
- cloves garlic, minced - 4 item
- salsa - 1 item
- ground cumin - 2 tsp
- boneless chicken breasts - 2 lb
- cayenne pepper - 1/4 tsp
- medium onions, chopped - 2 item
- chicken stock or broth - 6 c
- grated Monterey Jack cheese - 3 c
- cans chopped green chilies - 2 oz
- chopped fresh cilantro - 1 item
- dried oregano, crumbled
- olive oil or regular oil - 1 Tbsp
- dried Great Northern beans, picked and rinsed - 1 lb
How to make white chili:
Place beans in a heavy large pot. Add enough water to cover by at least 3-inches and soak overnight. Place chicken in a large pan, add cold water to cover and bring to a simmer. Cook until just tender, about 15 minutes. Drain and cool. Remove skin; cut into cubes. Drain beans.Heat oil in same pan over medium-high heat. Add onions and saute until translucent, about 10 minutes. Stir in garlic, chilies and seasonings. Saute about 2 minutes. Add beans and stock; bring to a boil. Reduce heat and simmer until beans are very tender. Stir occasionally. Add chicken and 1 cup of cheese; stir until cheese melts. Season to taste with salt and pepper.
Ladle chili into bowls. Serve with remaining cheese, salsa and cilantro.
