How to make white chili:

Place beans in a heavy large pot. Add enough water to cover by at least 3-inches and soak overnight. Place chicken in a large pan, add cold water to cover and bring to a simmer. Cook until just tender, about 15 minutes. Drain and cool. Remove skin; cut into cubes. Drain beans.

Heat oil in same pan over medium-high heat. Add onions and saute until translucent, about 10 minutes. Stir in garlic, chilies and seasonings. Saute about 2 minutes. Add beans and stock; bring to a boil. Reduce heat and simmer until beans are very tender. Stir occasionally. Add chicken and 1 cup of cheese; stir until cheese melts. Season to taste with salt and pepper.

Ladle chili into bowls. Serve with remaining cheese, salsa and cilantro.
