Ingredients/Components
- eggs - 2 item
- butter or margarine - 1/2 c
- salt - 2 tsp
- paprika - 3/4 tsp
- pepper - 1/8 tsp
- plus 1 1/2 tsp - 1 Tbsp
- medium pared potatoes, quartered - 12 item
- half and half I use milk, too - 1/2 c
How to make whipped potatoes:
Cook potatoes in boiling water to cover, until tender; drain. Beat potatoes, butter, half and half, eggs, salt and pepper until smooth. Spread potatoes in buttered baking dish (13 1/2 x 8 3/4 x 1 3/4-inch), swirling top with spoon.* Heat oven to 350Recipe categories: Low protein, Potato, Vegetables.
