Vichyssoise
Ingredients/Components
- butter - 1/2 c
- whipping cream
- salt and pepper - 1 item
- chopped parsley - 3 Tbsp
- medium potatoes - 2 item
- stalk celery - 1 item
- chicken stock - 5 c
- large onion - 1 item
- leeks - 4 item
- freshly chopped chives - 1 item
How to make vichyssoise:
Cut the leeks into 1/4-inch slices, using the white parts plus about 1 inch of the lightest green parts. Chop the onion finely.Melt butter; saute leeks and onion for 10 minutes. Add chicken stock, diced potatoes, chopped celery, salt and pepper. Puree mixture in an electric blender. Reheat. Taste; adjust seasonings.
