Ingredients/Components

  • butter - 1/2 c
  • whipping cream
  • salt and pepper - 1 item
  • chopped parsley - 3 Tbsp
  • medium potatoes - 2 item
  • stalk celery - 1 item
  • chicken stock - 5 c
  • large onion - 1 item
  • leeks - 4 item
  • freshly chopped chives - 1 item

How to make vichyssoise:

Cut the leeks into 1/4-inch slices, using the white parts plus about 1 inch of the lightest green parts. Chop the onion finely.

Melt butter; saute leeks and onion for 10 minutes. Add chicken stock, diced potatoes, chopped celery, salt and pepper. Puree mixture in an electric blender. Reheat. Taste; adjust seasonings.
