Ingredients/Components

  • boiling water - 2 c
  • chili powder - 2 Tbsp
  • ketchup - 2 Tbsp
  • oregano - 2 tsp
  • onion, chopped - 1 item
  • green pepper, chopped - 1 item
  • cloves garlic, chopped - 2 item
  • cans tomatoes - 2 oz
  • cayenne pepper - 1/4 1/2
  • cumin - 2 tsp
  • cans kidney beans - 2 oz
  • TVP Textured Vegetable Protein * - 2 c

How to make vegetarian chili:

Pour 2 cups boiling water over TVP and ketchup. Let stand 10 minutes. Saute onion, pepper and garlic. Add TVP along with the spices. Add tomatoes and beans. Cover and simmer 30 to 60 minutes.

*TVP stands for Textured Vegetable Protein and can be purchased at health food stores. It has no cholesterol, low sodium and almost no fat.
