Ingredients/Components

  • chili powder - 1 Tbsp
  • salt and pepper to taste - 1 item
  • carrots - 8 oz
  • tomato paste - 2 c
  • onion, finely chopped - 10 oz
  • cayenne pepper - 1 tsp
  • celery - 8 oz
  • chicken stock - 2 qt
  • green bell pepper - 8 oz
  • eggplant - 8 oz
  • garlic, minced - 2 tsp
  • zucchini - 8 oz
  • red bell pepper - 8 oz
  • Tabasco to taste - 1 item
  • tomatoes canned - 3 c
  • pinto beans, soaked overnight - 3 c

How to make vegetarian chili:

Bring beans to a boil. Cover and reduce heat. Cook at least 1 hour until tender. Saute onions and peppers until tender. Add spices. Mix well. Transfer to beans. Add tomato paste and tomatoes and simmer another one-half hour. Season to taste. Serve. Yields about 2 quarts.
