Vegetarian chili
Ingredients/Components
- chili powder - 1 Tbsp
- salt and pepper to taste - 1 item
- carrots - 8 oz
- tomato paste - 2 c
- onion, finely chopped - 10 oz
- cayenne pepper - 1 tsp
- celery - 8 oz
- chicken stock - 2 qt
- green bell pepper - 8 oz
- eggplant - 8 oz
- garlic, minced - 2 tsp
- zucchini - 8 oz
- red bell pepper - 8 oz
- Tabasco to taste - 1 item
- tomatoes canned - 3 c
- pinto beans, soaked overnight - 3 c
How to make vegetarian chili:
Bring beans to a boil. Cover and reduce heat. Cook at least 1 hour until tender. Saute onions and peppers until tender. Add spices. Mix well. Transfer to beans. Add tomato paste and tomatoes and simmer another one-half hour. Season to taste. Serve. Yields about 2 quarts.Recipe categories: Main dish, Beans, Chili.
