  • sugar - 1 Tbsp
  • salt - 1/2 tsp
  • butter - 1 Tbsp
  • cold water - 2 c
  • clove garlic, minced - 1 item
  • chili powder - 2 tsp
  • sliced pitted ripe olives - 1/2 c
  • chopped onions - 1 c
  • chopped green pepper - 1 item
  • ground beef - 1 lb
  • grated Cheddar cheese - 1 c
  • tomato sauce - 1 can
  • yellow cornmeal
  • dash of black pepper - 1 item
  • whole kernel corn, drained - 1 can
  • tomatoes, cut up - 1 can

How to make tamale pie:

Crust:1 c. yellow cornmeal1/2 tsp. salt2 c. cold water1/2 tsp. chili powder1 Tbsp. butter To make filling, brown ground beef, onions and green pepper; drain. Add the remaining ingredients, except cheese. Bring to a boil; simmer, uncovered for 20 minutes or until thickened. Add the cheese, stir until melted; set aside.

To make crust, combine cornmeal, salt, water and chili powder in saucepan. Cook over medium heat, stirring constantly until thickened. Add butter; mix well. Spread half crust mixture in 12 x 8 x 2-inch baking dish. Add filling, spoon on remaining crust. Bake at 375° for 45 minutes. Top with grated cheese.
