Sweet potato muffins
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 2 item
- milk - 1 c
- salt - 1/4 tsp
- flour
- nutmeg - 1/4 tsp
- baking powder - 2 tsp
- raisins - 1/2 c
- softened butter - 1/2 c
- chopped pecans or walnuts - 1/4 c
- mashed sweet potatoes, canned or cooked
How to make sweet potato muffins:
In a mixing bowl, cream butter and sugar. Add eggs and mix well. Blend in sweet potatoes. Sift flour with baking powder, salt, cinnamon and nutmeg. Add alternately with milk. Do not overmix. Fold in nuts and raisins. Grease muffin tins and fill 2/3 full. Bake 25 minutes in preheated 400° oven. Yield: 3 dozen muffins.Note: Great way to use up leftover sweet potatoes from Thanksgiving.
