Sweet potato cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- eggs, separated - 4 item
- evaporated milk
- nutmeg - 1 tsp
- egg yolks - 3 item
- coconut
- oil
- baking powder - 3 tsp
- stick butter - 1 item
- sifted flour
- hot water - 4 Tbsp
- grated sweet potatoes
How to make sweet potato cake:
Frosting:1 c. evaporated milk1 c. sugar1 stick butter3 egg yolks1 1/4 c. coconut1 tsp. vanilla Combine the oil and sugar; beat until smooth. Add egg yolk, beat well. Add hot water. Sift dry ingredients together. Stir in sweet potatoes. Beat well. Beat egg whites until stiff. Fold into mixture.Bake in 3 greased (8-inch) cake (layer) pans at 350° for 25 to 30 minutes. Cool and frost.
Frosting: Mix together in saucepan. Cook 12 to 15 minutes until the mixture thickens, let cool. Put between layers only.
