Sweet potato biscuits
Ingredients/Components
- milk - 1 3
- flour - 1 c
- butter - 2 Tbsp
- baking powder - 1 tsp
- small sweet potato - 1 item
How to make sweet potato biscuits:
Wrap the sweet potato in foil and bake in a 425° oven for 40 to 45 minutes or until soft. Remove from oven and set aside. Lower oven temperature to 400°. When cooled, peel and dice it.Sift the flour, baking powder and salt into a large bowl. Cut the sweet potato and butter into flour mixture, using a pastry blender or 2 knives. Add milk and stir until well moistened.
Place on lightly floured surface and knead 2 minutes. Roll to 1/2-inch thickness and cut with cutter. Bake at 400° for 15 to 18 minutes or until golden brown.
