Swedish potato salad
Ingredients/Components
- salt
- oil - 2/3 c
- cider vinegar - 1/4 c
- pepper - 1/8 tsp
- chopped parsley - 3 Tbsp
- potatoes, cooked - 2 lb
- diced canned pickled beets, well drained - 3/4 c
How to make swedish potato salad:
Place potatoes in a bowl. Blend vinegar, oil, salt and pepper in a small bowl and pour over potatoes. Chill several hours. Spoon potatoes into a salad bowl and sprinkle onion and parsley in the center of the potatoes. Spoon beets in a ring around the onions and parsley. Toss just before serving.
