Spinach rice casserole
Ingredients/Components
- fresh mushrooms, sliced - 1 lb
- brown rice, cooked according to pkg - 2 c
- sliced Monterey Jack cheese - 10 oz
- to 4 onions - 3 item
- basil, salt and pepper to taste - 1 item
- diced green pepper as desired - 1 item
- cooked, frozen spinach - 1 pkg
How to make spinach rice casserole:
Cook rice. Saute onions in oil. Wash and dry mushrooms; slice and fry rapidly in margarine. Place cooked rice in a 13 x 9-inch dish. Add sauteed onions, some diced green pepper, fried mushrooms and cooked spinach. Add a little basil, salt and pepper and bake, covered, at 350° for 30 minutes. Slice Monterey Jack (10 ounces) and place on top. Bake 10 minutes at 300°.Recipe categories: Side dish, Main dish, Casseroles.
