Ingredients/Components

  • vegetable oil - 1 Tbsp
  • long-grain rice - 1 c
  • crushed tomatoes or tomato sauce
  • cloves garlic, minced - 2 item
  • small onion, chopped - 1 item
  • vegetable broth or water
  • chopped bell pepper - 1/2 c
  • can chopped green chilies - 1 oz

How to make spanish rice:

Heat oil in a large saucepan over medium heat. Add rice and stir until coated with the oil. Blend tomatoes or tomato sauce, garlic, onion and 1/3 cup of broth or water in food processor or blender until smooth.

Stir tomato mixture into rice. Add remaining broth or water; cover and cook over low heat until the liquid has been absorbed and the rice is tender (25 minutes for white rice, 45 minutes for brown rice). Stir in the bell pepper and green chilies. Heat through. Serve immediately. Serves 4.
