Ingredients/Components

  • eggs - 10 item
  • cornstarch - 2 Tbsp
  • salt and pepper to taste - 1 item
  • can evaporated milk - 1 item
  • finely chopped onions - 2 Tbsp
  • grated Jack cheese - 2 lb
  • finely chopped pimentos - 2 Tbsp
  • finely chopped Ortega green chilies - 2 Tbsp

How to make spanish omelet:

Preheat oven to 325°. Butter 9 x 13-inch baking dish. Beat eggs. Salt and pepper to taste. Add remaining ingredients. Bake, uncovered, for 45 minutes.

This dish can be prepared in advance and frozen. Great for holiday brunches or the breakfast crowd.
