Spaghetti carbonara
Ingredients/Components
- butter, softened - 1/4 lb
- grated Parmesan cheese - 2 c
- dry white wine - 1 c
- chopped parsley - 1/2 c
- large onions, chopped fine - 2 item
- large or 8 medium eggs - 6 item
- thin bacon slices - 1 lb
- heavy or sour cream, warmed slightly - 1 c
- spaghetti or linguine thin spaghetti - 2 lb
- liberal grinding of black pepper - 1 item
How to make spaghetti carbonara:
Cook bacon slices until crisp. Drain on paper towels. Leave 3 tablespoons bacon fat in skillet. Saute onions in bacon fat until golden and soft. Add wine and cook until wine evaporates. Beat together eggs, butter, cream, Parmesan and parsley. Add onions. Cook spaghetti in boiling salted water as directed on package. Transfer with slotted spoon to large warmed bowl. Add egg-and-cheese mixture and toss. Crumble bacon and sprinkle over top. Grind black pepper over all and serve. Serves 8.Recipe categories: Pasta, Main dish, Spaghetti.
