Southwestern spoon bread
Ingredients/Components
- milk - 3/4 c
- salt - 1/2 tsp
- baking powder - 1 tsp
- vegetable oil - 1/3 c
- eggs, lightly beaten - 2 item
- 4 oz - 1 c
- yellow cornmeal - 1 c
- can cream-style corn - 1 1/2
- can chopped green chilies - 1 oz
How to make southwestern spoon bread:
In a mixing bowl, stir together all ingredients, except last two. Pour half the batter into a greased 2-quart baking dish. Sprinkle with chilies and cheese. Pour remaining batter over all. Bake at 375° for about 45 minutes or just until set. Serve warm with a spoon. Yields 6 to 8 servings.Recipe categories: Breads, Grains, Main dish.
