Southern sweet potato salad
Ingredients/Components
- chopped pecans - 1/2 c
- salt - 1/4 tsp
- chopped dates - 1/3 c
- ginger - 1/2 tsp
- lemon juice - 2 Tbsp
- honey - 1 Tbsp
- grated orange peel - 1 tsp
- ground nutmeg - 1/8 tsp
- orange juice - 2 Tbsp
- lettuce leaves - 1 item
- mayonnaise - 1 c
- can mandarin oranges, drained - 1 item
- sliced celery - 1 c
- sweet potatoes - 2 lb
How to make southern sweet potato salad:
In a medium saucepan, cook sweet potatoes until tender, 5 to 8 minutes. Do not overcook; drain. Toss with the lemon juice. In a large bowl, combine mayonnaise, orange juice, honey, orange peel, ginger, salt and nutmeg. Add the warm potatoes, celery and dates; toss to coat well. Cover and chill. Before serving, gently stir in the pecans. Spoon salad onto a lettuce-lined platter. Arrange orange slices around salad.Recipe categories: Salads, Potato, Yam/sweet potato.
