  • flour - 4 c
  • butter - 1 lb
  • eggs, separated - 6 item
  • baking powder - 1 tsp
  • pecans - 1 lb
  • lemon extract
  • red cherries - 1/2 lb
  • green cherries - 1/2 lb
  • lite brown sugar - 1 lb
  • cut up candied pineapple - 1/2 lb

How to make southern pecan cake:

Cream butter and sugar. Add yolks, one at a time. Add extract. Dredge fruit and nuts with 2 cups flour. Then add other 2 cups to mixture. Fold in stiffly beaten egg whites. Let sit overnight. Keep covered tightly. Bake at 250° for 3 hours. Makes 2 loaves. Put pan of water in oven while baking cakes to make cakes moist.
