Southern pecan cake
Ingredients/Components
- flour - 4 c
- butter - 1 lb
- eggs, separated - 6 item
- baking powder - 1 tsp
- pecans - 1 lb
- lemon extract
- red cherries - 1/2 lb
- green cherries - 1/2 lb
- lite brown sugar - 1 lb
- cut up candied pineapple - 1/2 lb
How to make southern pecan cake:
Cream butter and sugar. Add yolks, one at a time. Add extract. Dredge fruit and nuts with 2 cups flour. Then add other 2 cups to mixture. Fold in stiffly beaten egg whites. Let sit overnight. Keep covered tightly. Bake at 250° for 3 hours. Makes 2 loaves. Put pan of water in oven while baking cakes to make cakes moist.Recipe categories: Desserts, Cakes, Fruit.
