Southern pecan bars
Ingredients/Components
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour - 3 Tbsp
- sifted flour
- finely chopped pecans - 1/4 c
- brown sugar, packed - 1/2 c
- double-acting baking powder - 1/2 tsp
- white corn syrup - 1/4 c
- coarsely chopped pecans - 3/4 c
- soft butter or margarine - 1/3 c
How to make southern pecan bars:
Sift 1 1/3 cups flour with baking powder. Cream butter until light and fluffy. Gradually add 1/2 cup brown sugar. Blend in flour mixture; stir in 1/2 cup pecans. Press mixture firmly into greased 12 x 8-inch pan. Bake for 10 minutes at 350°.Meanwhile, beat eggs until foamy, blend in corn syrup, 1/4 cup brown sugar, 3 tablespoons flour, salt and vanilla. Pour over partially baked crust. Sprinkle with 3/4 cup pecans. Bake for 25 to 30 minutes at 350°. Cool; cut into bars. Store in tightly covered container. Makes 4 dozen bars.
