Sicilian salad
Ingredients/Components
- salt - 1/2 tsp
- clove garlic, halved - 1 item
- chopped fresh parsley - 1 tsp
- wine vinegar - 1/4 c
- olive oil - 1/3 c
- white pepper - 1/4 tsp
- dried oregano - 1/2 tsp
- large green peppers - 2 item
- medium sweet onion, sliced - 1 item
- large firm, ripe tomatoes - 2 item
- chopped sweet fresh basil leaves or 1/2 tsp - 1 tsp
- head escarole, washed - 1/2 item
- bunch radishes, washed - 1/2 item
How to make sicilian salad:
Make dressing: In jar with lid, combine oil, vinegar, garlic, salt, pepper, basil, oregano and parsley. Shake well to combine. Refrigerate to chill well and to blend flavors. Remove and discard garlic.Wash peppers; remove seeds and ribs. Slice lengthwise. Boil peppers, covered, in salted, boiling water until tender, about 10 minutes. Drain; refrigerate until well chilled. Cut escarole into small pieces. Cut each tomato in eighths. Cut radishes into bite size pieces. In large salad bowl, combine vegetables. Toss with some of the dressing.
