Scalloped sweet potatoes and apples
Ingredients/Components
- brown sugar - 3/4 c
- butter - 1/2 c
- apple cider - 1/2 c
- mace - 1/2 tsp
- medium sweet potatoes - 3 item
- medium apples, pared and sliced - 2 item
How to make scalloped sweet potatoes and apples:
Boil potatoes in water for 25 minutes. Drain and let cool. Peel and cut into 1/4-inch slices. Melt butter in small pan. Add brown sugar, cider and mace. Bring to a boil, stirring until sugar dissolves. Simmer, uncovered, 10 minutes.In baking dish, layer potato and apple slices. Spoon half of syrup over potato mixture. Bake, covered, at 400° for 25 minutes. Remove cover and bake 25 more minutes, basting with remaining syrup. Serves 6.
