  • flour - 4 Tbsp
  • butter - 4 Tbsp
  • diced green pepper - 3/4 c
  • chopped onion - 3/4 c
  • chicken broth
  • parsley for garnish - 1 item
  • pepper to taste - 1 item
  • salt to taste - 1 item
  • grated mild cheese - 1 c
  • to 5 large potatoes, peeled and sliced - 4 item

How to make scalloped potatoes:

In a 9 x 13-inch casserole dish, layer potatoes, onion, green pepper and cheese alternately. In a saucepan, melt butter. Blend in flour. When mixed, add chicken broth. Heat, stirring frequently, until mixture bubbles and thickens. Pour over potatoes and sprinkle with parsley. Bake in a preheated 350° oven for 1 hour and 15 minutes.
