  • butter, softened - 1/4 lb
  • sugar - 2 c
  • eggs - 4 item
  • vanilla - 1 tsp
  • flour - 3 c
  • soda - 1/2 tsp
  • buttermilk - 1 c
  • baking powder - 1/2 tsp
  • pinch of salt - 1 item
  • shortening - 1/2 c
  • rum - 3 oz
  • rum flavoring - 1 tsp
  • Glaze:2 sticks butter

How to make rum cake:

Glaze:2 sticks butter1 c. sugar3 oz. rum Cream butter, shortening and sugar. Add eggs, one at a time. Combine flour, soda, baking powder and salt. Alternate, adding flour mixture and buttermilk to creamed mixture, beginning and ending with flour. Add vanilla and rum flavoring. Bake at 325° for 1 hour in a greased and floured Bundt pan, tube pan or 2 loaf pans.

For Glaze: Melt butter with sugar over low heat; stir to melt sugar. Add rum. Pour over hot cake and leave in pan 2 hours.

This cake can be made ahead and frozen.
