Rich chocolate cake
Ingredients/Components
- vegetable oil - 1 c
- cocoa - 1/2 c
- sugar - 2 c
- eggs - 2 item
- salt - 1/2 tsp
- buttermilk - 1 c
- all-purpose flour
- vanilla - 1 tsp
- hot water - 1 c
- baking soda - 2 tsp
- Add eggs; beat on medium speed until well blended
- unsweetened cocoa - 4 Tbsp
- milk whole milk is best - 3/4 c
- butter or margarine - 1 Tbsp
How to make rich chocolate cake:
Combine oil, cocoa and sugar in mixing bowl; beat on low speed until well mixed. Add eggs; beat on medium speed until well blended. Add salt, buttermilk, flour and vanilla. Add to mixture on low speed until combined, then beat on high speed for 2 minutes. Add soda to hot water; dissolve well. Add gradually to cake batter; mix just until combined. (Batter will be very thin before baking.) Bake in greased and floured 13 x 9 x 2-inch baking pan (or two layer pans) at 375° for 40 minutes. Test with toothpick in center of cake for doneness. Frost with Chocolate Fudge Frosting, if desired.Chocolate Fudge Frosting:1 c. granulated sugar4 Tbsp. unsweetened cocoa3/4 c. milk (whole milk is best)1 Tbsp. butter or margarine1 tsp. vanilla Combine sugar, cocoa and milk in small, heavy saucepan; cook until mixture begins to boil. Cover; cook for 2 to 3 minutes, until steam washes sugar crystals down from sides of pan. Uncover; reduce heat and cook without stirring until mixture reaches soft ball stage (234°). Remove from heat. Cool mixture until it reaches temperature of 110°. Add butter and vanilla, stirring until butter is dissolved. Pour over warm cake. Yields enough to cover a 13 x 9 x 2-inch cake.
