Ingredients/Components

  • sugar - 1/2 c
  • vanilla - 1/2 tsp
  • milk - 2 c
  • salt - 1/4 tsp
  • raisins - 1/2 c
  • ground nutmeg - 1 item
  • hot cooked rice - 2 c
  • eggs or 4 egg yolks - 2 item

How to make rice pudding:

Heat oven to 325°. Beat eggs in ungreased 1 1/2-quart casserole. Stir in sugar, raisins, milk, vanilla, salt and hot rice. Sprinkle with nutmeg. Bake uncovered 50 to 60 minutes, stirring occasionally, until knife inserted halfway between center and edge comes out clean. Serve warm or cold and, if desired, with cream. Refrigerate any remaining pudding. Serves 8.
