  • sugar - 2 c
  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • oil - 1/2 c
  • baking soda - 1 tsp
  • rhubarb, raw, cut into pieces - 4 c

How to make rhubarb cake:

Stir sugar into rhubarb. Add oil with beaten eggs and vanilla. Stir in dry ingredients all at once. Pour into 9 x 13-inch pan, greased and floured. Mix 1/3 cup sugar with some cinnamon and sprinkle on top before baking. Bake at 350° for 55 minutes to 1 hour. Do not freeze.
