Ingredients/Components
- oregano - 3/4 tsp
- onion, chopped - 2 c
- salt to taste - 1 item
- hot cooked rice - 1 item
- Tabasco sauce - 1/2 1
- white pepper - 1/2 tsp
- black pepper - 1/8 tsp
- celery, chopped
- bay leaves - 2 item
- thyme - 1 tsp
- chicken stock
- red pepper - 1/8 tsp
- dried red beans - 1 lb
- fresh garlic, minced - 2 3
- salt pork or bacon - 4 oz
How to make red beans and rice:
Soak beans overnight in 1 1/2-quarts water or bring water to boil for 5 minutes and then let soak for 2 hours; drain. Add chicken broth and water to cover and remaining ingredients. Cook slowly for 1 1/2 to 2 hours. Serve over rice.Serving Suggestion: This is delicious served over rice with smoked or andouille sausage and corn bread.
