Ingredients/Components

  • oregano - 3/4 tsp
  • onion, chopped - 2 c
  • salt to taste - 1 item
  • hot cooked rice - 1 item
  • Tabasco sauce - 1/2 1
  • white pepper - 1/2 tsp
  • black pepper - 1/8 tsp
  • celery, chopped
  • bay leaves - 2 item
  • thyme - 1 tsp
  • chicken stock
  • red pepper - 1/8 tsp
  • dried red beans - 1 lb
  • fresh garlic, minced - 2 3
  • salt pork or bacon - 4 oz

How to make red beans and rice:

Soak beans overnight in 1 1/2-quarts water or bring water to boil for 5 minutes and then let soak for 2 hours; drain. Add chicken broth and water to cover and remaining ingredients. Cook slowly for 1 1/2 to 2 hours. Serve over rice.

Serving Suggestion: This is delicious served over rice with smoked or andouille sausage and corn bread.
